Ingredients
- 1/2 cup oats
- 1/2 cup buckwheat kernels
- pinch rock salt
- 1 tsp vanilla
- 1 scoop of chocolate protein powder ( or vanilla just add more cacao)
- 1 tbsp cacao powder
- 1/2 tbsp turmeric
- 2 tbsp pepitas
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- 1 tbsp flaxseeds
- 1/3 cup melted coconut oil
- 1 tbsp almond butter
- 1 tbsp maple syrup
- 1/2-3/4 cup mixed nuts chopped ( I used a mix of walnuts, almonds, cashews, pecans)
Method
- Preheat the oven to 170 degrees celsius
- Mix all dry ingredients together in a bowl
- Microwave wet ingredients and stir together
- Mix the wet mix through the dry until thoroughly combined. You can use your hands to make sure
- If it feels too wet, add some more buckwheat / oats and if it is too dry add a bit more maple or coconut oil. It should be quite stuck together
- Line a baking tray ( or 2 if small) with baking paper
- Spread the mix out evenly ( if it is too thick it is harder to cluster so try and make it well spread out)
- Bake for 20-30 minutes or until golden ( check at 20 and taste or look to see)
- Remove and allow to cool before breaking ( this is key to the clusters forming ! Don’t touch it till it’s cool)
